Naturally Blue Ramen Brings The Ocean’s Dreamy Hue To Your Bowl

Mother Nature is an artist in her own right. Now and then, brands borrow her pastels to develop their own delicious edible creations, including a rose quartz chocolate and a turquoise wine.
In Tokyo, Japan, ramen restaurant Kipposhi serves noodles with a naturally blue clear chicken broth. Although blue isn’t a traditionally appetizing color, the eatery has become an Instagram sensation among locals.
Kipposhi keeps the secret of its stock’s color a secret, though owner Mr Koizumi says the hue was inspired by the beautiful Hawaiian Sea. It’s also made with natural ingredients—a far cry from the artificially-colored rainbow foods that are trending today.
Creating a crystal clear broth isn’t as simple as it seems. In order to replicate the blue ocean, Koizumi boils the chicken soup with minced meat, which helps to extract particles that make it cloudy.
The ramen noodles are then topped with poached chicken filet slices, a soft-boiled egg, and bright greens.
